Red Curry Tuna Steaks - Cooking, Coaching & Conversations with Dr Lucy Burns

Cooking, Coaching & Conversations with Dr Lucy Burns is live on Facebook at 6pm Tuesday nights. In this week's episode, Dr Lucy shows how to make a quick and easy low carb red curry with tuna steaks.

Ingredients

  • olive oil
  • chopped onions, we used frozen
  • zucchinis, chopped
  • green beans, trimmed
  • capsicum, sliced
  • Mingle Seasoning 'red curry spice mix sachet'
  • can of coconut cream
  • frozen tuna steaks

Instructions

  1. Heat a large frying pan over medium heat and add some olive oil and chopped onions.
  2.  After the onions have cooked for a few minutes add the veggies in.
  3. Sprinkle in the red curry sachet and pour in the coconut cream.
  4. Stir to combine.
  5. Add the tuna steaks into the curry. Cover and allow to simmer until the tuna and veggies are cooked through.
