Easy Dinner with a Protein-Packed Shakshuka

As the day winds down, it's helpful to conclude with a meal that's not only satisfying but also aligns with our health and nutritional goals. Enter the High Protein Shakshuka – a versatile dish that brings warmth, flavour, and a nutrient-rich profile to your dinner table. 

Cook Once Eat Twice

Last week I cooked Low Carb Chow Mein. (You can check it out here). These recipes use the same base of onions, minced beef, mushrooms and capsicum. This is the perfect dish to bulk cook. Simply double the base ingredients and then divide in two. Add the cabbage, curry and sour cream for chow mein. The spices, eggs and passata for Shakshuka. Voilà-two meals that taste completely different!

Incorporating a high-protein meals in your day is crucial for muscle repair and growth, especially if you've engaged in physical activity. Protein also plays a vital role in keeping you satiated, reducing hunger and making it less likely to binge on high carb foods. How to Prepare High Protein Shakshuka

Ingredients:

  • 1 tablespoon of olive oil
  • 1 onion, chopped
  • 1kg of grass-fed beef mince
  • Mingle Seasonings taco spice blend sachet
  • 500g mushrooms, sliced
  • 1 capsicum, chopped
  • 700mls of passata
  • 6 eggs
  • 100g of grated cheese
  • Optional herbs for garnish (chopped parsley, or spring onions)

Simple Cooking Steps

  1. Begin by heating the olive oil in a large skillet and sautéing the onion until soft.
  2. Add the beef mince and taco seasoning, cooking thoroughly until the beef is browned.
  3. Stir in the mushrooms, capsicum, and passata, simmering until the sauce thickens and the vegetables are tender.
  4. Make wells in the mixture, gently crack the eggs into each, and let cook, covered, until the eggs are poached to your liking.
  5. Garnish with grated cheese and optional herbs, ready to serve.
