I love a good Mexican Dish. Mexican dishes seem to have gazillion names but all taste fairly similar- The old me ate heaps of burritos, fajitas and tacos.
I was never a fan of the hard shell tacos which seem so messy. One bite and they fall apart.

You can make this recipe with a slow cooked shoulder of pork as in the photo but I used mince for speed
