Dr. Lucy's Easy Veggie Frittata

Ingredients:

  • 12 Eggs
  • 100mL Pure Cream
  • Salt to taste
  • 2 teaspoons Pizza Mingle Seasoning
  • 250g Mushrooms, chopped
  • 100g Spinach
  • 200g Precooked Diced Pumpkin
  • 200g Danish Fetta, diced
  • 1/2 cup Grated Parmesan

Method:

  1. Preheat oven to 180 degrees Celsius.
  2. Crack twelve eggs into a bowl. Beat eggs roughly.
  3. Add Pizza Mingle, cream, and salt. Mix together.
  4. Transfer into a large baking dish.
  5. Sprinkle veggies and fetta across the surface for an even distribution.
  6. Sprinkle Parmesan on top.
  7. Bake at 180 degrees Celsius for around 40 minutes or until it stops wobbling.
