Low Carb Bread Alternatives

Welcome to this week's edition of Cooking, Coaching & Conversations, where Dr. Lucy showcases the simplicity of crafting "Jimmy Cakes" - a delightful and effortless alternative to traditional bread that can be whipped up in minutes. As a bonus, we'll also be sharing a recipe for a 90-second mug bread! These alternatives offer a fantastic transition away from conventional bread.

Jimmy Cakes Recipe (Makes 4 cakes)

Ingredients:

  • 2 eggs
  • 1 cup grated mozzarella cheese

Instructions:

  1. Preheat a pancake maker (such as the Kambrook pancake maker works well).
  2. Pour a 1/4 portion onto each hotplate.
  3. Cook for approximately 5 minutes. (Note: Avoid overfilling.)
  4. Voila! Simple and delicious!

90-Second 'Bread' Recipe

Ingredients:

  • 1 tablespoon of butter
  • 1 egg
  • 3 tablespoons of almond meal/flour
  • 1 teaspoon of psyllium husk
  • 1/2 teaspoon baking powder
  • Pinch of salt

Directions:

  1. Melt butter in a microwave-safe mug or ramekin and let it cool slightly.
  2. Whisk the egg and add it to the slightly cooled melted butter.
  3. Combine almond meal, psyllium husk, baking powder, and salt.
  4. Stir the dry ingredients into the egg and melted butter mixture.
  5. Microwave for 90 seconds.
  6. If you prefer using an oven, bake at 175°C for 15 minutes in a suitable container.
  7. Toasting is also an option after the bread has been cooked! Using a square/rectangular microwave-safe container makes toasting easier.

These alternatives not only provide an easy solution and extra nutrition but also offer versatility. They can be customized with various herbs, a huge variety of toppings or used as a base for sandwiches, making them an ideal substitute for traditional bread.
