Low Carb Brownies - Cooking, Coaching & Conversations with Dr Lucy Burns

This week on Cooking, Coaching & Conversations Dr Lucy made a delicious low carb chocolate brownie recipe. This is a simple and easy chocolate brownie that is made by throwing all the ingredients into the blender. This low carb brownie is a great recipe to take along to a social occasion or you can portion it up and pop it in the freezer for an occasional dessert.

Ingredients

  • 150g butter or coconut oil
  • 1/2 cup boiling water
  • 1/2 cup cocoa or cacao powder
  • 1/4 - 1/2 cup powdered sweetener (one-for-one sugar replacement)
  • 150g almond flour/meal 
  • 3 eggs
  • 1 tsp vanilla extract
  • pinch of sea salt
  • 1/2 tsp baking powder

Instructions

  1. Preheat your oven to 350F/180C. Line your baking tin with non-stick baking paper.
  2. Add all the ingredients to a blender or Thermomix and blend until it is combined. You may need to scrape down the sides and blend again.
  3. Add the brownie batter to your lined tin and bake in the oven for 20 minutes or until cooked through.
