Minted Festive Lamb Delight with Christmas Salad

Ingredients:

Herbed Lamb Chops:
800g lamb chops
Mingle Green Goddess seasoning
Salt (to taste)

Minty Yoghurt Dressing:
150mL Chobani full-fat Greek yoghurt
4 heaped teaspoons Mingle Green Goddess seasoning

Christmas Salad:
125g fresh baby spinach
1 capsicum, diced
10 cherry tomatoes, halved
1 avocado, diced
3 tablespoons sundried tomatoes
125g Danish feta, diced
100g Kalamata olives
Salt (to taste)
Mingle Green Goddess seasoning
2 tablespoons lemon-infused olive oil

Instructions:

Preparing Herbed Lamb Chops:
1. Preheat the air fryer.
2. Sprinkle both sides of the 800g lamb chops liberally with Mingle Green Goddess seasoning.
3. Air fry the lamb chops until the fat is just crispy.
4. Add salt to taste.

Minty Yoghurt Dressing for Herbed Lamb Chops:
1. In a bowl, combine 150mL Chobani full-fat Greek yogurt with 4 heaped teaspoons of Mingle Green Goddess seasoning.
2. Stir well to combine the ingredients thoroughly.

Making Christmas Salad:
1. In a large mixing bowl, combine 125g fresh baby spinach, diced capsicum, halved cherry tomatoes, diced avocado, sundried tomatoes, diced Danish feta, and Kalamata olives.
2. Sprinkle the salad liberally with salt, Mingle Green Goddess seasoning, and add 2 tablespoons of lemon-infused olive oil.
3. Toss the salad gently until the ingredients are evenly coated with the seasoning and oil.

Now, you're ready to enjoy your flavourful herbed lamb chops with a refreshing minty yoghurt dressing alongside the vibrant Christmas salad!
