Chia Pudding - Cooking, Coaching & Conversations with Dr Lucy

This week on cooking, coaching & conversations, Dr Lucy Burns shows us how to make a quick and easy low carb breakfast option - chia pudding!

LEMON CHIA PUDDING

Ingredients

  • 500ml Greek yoghurt
  • 150ml cream or water
  • 2/3 cup of chia seeds
  • juice of half a lemon

Instructions

  1. Combine all ingredients in a bowl and stir well to combine. You may need to add more water if the mixture is too thick. 
  2. Place in the fridge for a few hours or overnight to set. You can set it in a large bowl or decant it to individual serving jars and then place in the fridge.

CHOCOLATE PUDDING

Ingredients

  • 270ml can of coconut cream
  • 1 dessert spoonful of cacao powder
  • 1 dessert spoonful of granulated sweetener
  • 1/3 cup chia seeds
  • water as needed

Instructions

  1. Combine the coconut cream, cacao powder and sweetener in a bowl and stir to combine. Add some water if you find the mixture is too thick.
  2. Stir in the chia seeds.
  3. Place in the fridge for a few hours or overnight to set. You can set it in a large bowl or decant it to individual serving jars and then place in the fridge.
